Potato Cheese Soup

6 Medium Potatoes 1 Teaspoon Salt
2-3 Carrots Pepper, To Taste
1 Onion chicken bouillon & water or chicken stock
1 Stalk Celery 1 Cup Cheddar Cheese, Shredded
2-3 Cloves Garlic  

Chunk up clean veggies in Dutch oven, add seasonings and almost cover with water/stock. Boil until soft. Place all in blender, blend until smooth. Return to pan, add 1 cup shredded cheese. Mix and serve!

Also very easy to increase the recipe size, or add/remove veggies as you prefer.
